Mixed Berry Grits Pudding

or 1 | milk
or a pinch of salt
or 150 g semolina
or 20 g of butter
or 2 eggs, separated
or 20g extra cold butter
or 1 tablespoon ground cinnamon
or 750g mixed berries (frozen)

(1) Boil the milk after adding salt and butter to it.

(2) As the milk begins to heat up, cook the fruit according to the instructions on the package.

(3) Stir the semolina when the milk starts to boil. Reduce the heat slowly to allow it to simmer for about 10 minutes. The mixture gradually thickens. Keep stirring to prevent burning.

(4) Include leftover butter and beaten egg yolks. Also add cinnamon to the pudding. Mix well, beat the egg whites until stiff, then carefully place them under the pudding. Mix in some of the fruit, sprinkle berries on top for garnish, add some cinnamon, and you’re ready to serve.
