Crock Pot Spinach and Crab Lasagna

What do you need:

  • 1 package of dry lasagna noodles
  • 1 bunch fresh spinach, chopped
  • 15 fresh mushrooms, sliced
  • 2 cups Alfredo sauce
  • 1 1/2 cups grated mozzarella cheese
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups cottage cheese
  • 1 cup imitation crab meat

For 1 cup Alfredo sauce in a slow cooker, then top with a layer of lasagna noodles. Spread some of the spinach, mushrooms, crab meat, half the ricotta cheese, and half the cottage cheese over the noodles. Repeat layers with remaining ingredients. You should end up with a layer of lasagna noodles followed by the remaining Alfredo sauce. Cover and cook for 2 hours and 15 minutes on high heat. When it’s ready, sprinkle mozzarella cheese over the lasagna and cook for another 30 minutes.

Slow Cooked Creamy Fish Chowder

What do you need:

  • 1 can of evaporated milk
  • 1/4 kilogram halibut, cut into small pieces
  • 4 slices of bacon, chopped
  • 2 large carrots, diced
  • 2 large potatoes, diced
  • 3 celery stalks, diced
  • 1 chopped onion
  • 2 garlic cloves, minced
  • 6 cups of chicken broth
  • 1 cup shrimp, peeled and deveined
  • 1 cup of scallops
  • 1 cup of fresh corn kernels
  • 1/2 teaspoon red pepper flakes
  • ground black pepper to taste

In skillet, cook bacon 6 to 8 minutes or until browned. Add onion and garlic and cook until tender. Transfer the bacon mixture to a crock pot. Add chicken broth, carrots, potatoes, celery, and corn. Cover and cook for 3 hours on high heat. Add the shrimp, scallops, and halibut to the pot and cook for an additional 1 hour. When ready, add evaporated milk and heat before serving.

Crock Pot Tuna and Beans

What do you need:

  • 1 kilo navy beans, soaked overnight and drained
  • 2 cans albacore tuna in water, drained and flaked
  • 1 clove garlic, crushed
  • 2 basil sprigs, finely chopped
  • 6 cups of water
  • 2 cups of chopped tomatoes
  • 4 tablespoons olive oil
  • Salt and ground black pepper to taste

Heat the olive oil in a pan and cook the garlic for 1 minute. Discard the garlic and then place the beans in the oil, tossing to coat. Transfer to a slow cooker. Add the water, cover and cook for 1 hour on high. Reduce heat to low and cook for an additional 4 to 6 hours. Add the tuna, basil, and tomatoes, then season with salt and pepper.
